Cereals, mainly composed of starch and some protein of low biological value, could be incorporated into our food only after the mastery of fire as our genetics does not allow us to consume raw starches.

Cereals increased its presence in our food through the agricultural revolution that began about 10,000 years ago.

Cereals are quite low in essential nutrients. The industrial revolution allowed their refining, making them totally empty calorie.
